The tour lasts about 1 hour and 30 minutes, plus time to taste the wines and enjoy the accompanying food.
The tour begins among the vine rows, where we explain the winery’s production philosophy and demonstrate the innovative branched pruning technique, essential for promoting the longevity and health of the vine. We’ll delve into practices such as dry pruning, performed during the winter, and shoot selection, which accompanies the spring growth spurt.
v These are technical procedures, but also choices of care: interventions designed to respect the plant, promote its balance, and ensure the quality of the grapes from the very beginning.
The tour then continues in the cellar, with an in-depth look at the main techniques of winemaking. We will explain the choices that guide the transformation of grapes into wine: from harvest to extraction, from fermentation to aging.
The tour concludes with a tasting of 5 of the winery’s wines, accompanied by a rich gastronomic pairing:
• Platter of Tuscan cold cuts and cheeses
• Tomato and basil salad and/or seasonal vegetables
• Bruschetta with our own extra virgin olive oil
• Tuscan bread
